ingredients

  • 2 cup Milk
  • 1 cup Milk Powder
  • 1 tablepoons Corn flour
  • 1 cup Fresh cream
  • 1 cup Litchi fruit puree
  • 1/2 cup optional Litchi chopped

Method

  • Step 1

    Peel and chop the lychees

  • Step 2

    Add 1 cup litchi to a blending jar and blend it to smooth and set it aside

  • Step 3

    In a mixing bowl take 1 cup milk

  • Step 4

    Add milk powder

  • Step 5

    Then add corn flour and mix it all well with a balloon whisk without any lumps

  • Step 6

    Add the remaining 1 cup milk to a sauce pan and bring it to boil in a medium flame for 3-4 minutes

  • Step 7

    Now add the milk powder and corn flour mixture and mix it , cook it on medium flame for another 4-5 minutes while stirring it continuously

  • Step 8

    Allow the milk mixture to cool completely

  • Step 9

    Take a large mixing bowl and add the milk mixture, powdered sugar

  • Step 10

    Then add lychee / litchi puree and mix it well with electric hand mixer or you can also use a blending jar

  • Step 11

    Now add a chilled cream ( use a large mixing bowl i had to change my bowl twice as it was not sufficient to beat the mixture)

  • Step 12

    And beat it for 4-5 minutes in high speed (instead you can also use mixer jar)

  • Step 13

    Finally add chopped litchi and mix it once Pour the mixture to loaf tin or a deep container and cover it fully it a cling wrapper (make sure that the wrapper touches the ice cream mixture) and freeze it for 8-10 hours or until it sets

  • Step 14

    Take it out of the freezer rest it on counter for 2-3 minutes

  • Step 15

    Then scoop it and serve it immediately
