Whole Grain Thumbprint Cookies
Happy international nutella day everyone. Yes, who knew there was such a thing. Here are two recipes to celebrate, both made with homemade, refined sugarfree "nutella"...much healthier than the kind found in a jar on the supermarket shelf. On the right: Whole Grain Thumbprint Cookies with homemade nutella, recipe in the blog archives On the left is Millet/Oat Porridge with Chocolate and Hazlenut (posted here yesterday). Here's the recipe: 1/4 C Millet flakes 1/4 C Rolled Oats 1 1/2 Filtered water 2 Squares 92% dark chocolate (I used Vivani that is sweetened with coconut sugar) 1 Tbsp Hazelnut Butter 1 Tbsp Crushed Roasted Hazelnuts Chia seeds, coarsely chopped toasted hazelnuts and rice milk for serving Brown rice malt syrup to sweeten (optional) Add millet, oats and water to a pot and let cook about 10 minutes until it starts to thicken. Turn off heat. Coarsely chop the chocolate squares, add them to the porridge and stir through until melted. Stir in crushed hazelnuts and hazelnut butter until well mixed. Add sweetener if desired and mix well. Transfer to a serving bowl, top with chia seeds, hazelnuts and rice milk to serve. Enjoy!
