It's made with a curry infused cauliflower pizza crust, then spread with garlicky hummus for the sauce, thinly sliced beetroot, avocados, brussels sprouts, pomegranate and oven-roasted curried chickpeas. My hubby likes to tease me for drooling in my sleep; but I like to inform him that I’m just dreaming of Papaya Sunshine's recipes! These are made with cocoa powder, peanut butter, dates and runny honey. They are SO rich and decadent you will forget your name! Gourmet Toast 4 Ways. Starts with a thick layer of cashew cream cheese. Topped with either zucchini ribbons, cherry tomatoes, avocados and persimmon, and then sprinkled with fresh dill, parsley, chia, buckwheat and salt flakes. I made this toast with the plan of eating just one, but ended up eating them all! It might be my food coma talking, but this totally has me rethinking how I breakfast. Toast with the most. Mini Pot Pies with Black Lentils, Fennel and Thyme. It’s such a warm and comforting mid-winter dish! And baking them in mini-pots served purposes; 1. To stop me from eating an entire family sized pie to myself, and 2. To save on hospital visits after jabbing Mitch’s hands for the slice I'd claimed. Shouldn’t the cook receive some sort of hierarchy on dibs? Tell it to the E.R. Say no more - these individual sized pots saved the day... and some prying hands for that matter.

Citrus Salad with Sweet Greens, Dill and Balsamic Glaze. This recipe is a mix of sliced navel oranges, grapefruit, and blood orange, on a bed of mâche salad greens. Topped with dill, chopped hazelnuts, hemp hearts and a quality balsamic glaze. The combination is cosmic! I've been eating these citrus fruits so much over the past few weeks that there are days when I've only eaten oranges come 3 p.m.! You'd think this realization would stop the obsession, but sadly no. Instead, I've found ways to incorporate them into my meals so I can get away with consuming oranges all day without judgement. I swear, the amount of enthusiasm over these citrus fruits is something out of a Welch's commercial! Do you think they audition adults for the role? Or is it just kids? Hope you’re having a good one!

Almond meal and cauliflower flatbread, spread with cashew parsley pesto, and topped with roasted cherry tomatoes, kale, thinly sliced radish and pomegranate seeds. I can’t even begin to describe how delicious this is! I’ve literally been making it for two weeks straight. The flatbread was adapted from @edgarraw pizza crust, using leftover almond meal from homemade almond milk! That’s right, you can have your milk and pizza-it too! Thanks for the tip Edgar!
