These cups are beyond simple and easy to make. They’re no bake, vegan, gluten free, refined sugar free and have a sneaky source of protein too - ticking all the boxes.

ingredients

  • 1/3 cup Frozen Berries
  • 3/4 cup Shredded Coconut
  • 1 scoop Vanilla Protein Powder
  • 1/2 cup Dark Chocolate Chips, melted

Method

  • Step 1

    dd melted chocolate to silicone muffin case and use a spoon to bring up the sides. Set aside in the freezer to set while making the filling.

  • Step 2

    Defrost frozen berries in the microwave and mash. Mix with coconut and protein until combined and thick.

  • Step 3

    Spoon into set chocolate cups, pressing down firmly. Add remaining melted chocolate on top and leave in the fridge for a couple of hours to set.
