What do you do when you're out of breakfast inspo? Make avocado toast, duh! Toss on whatever toppings you have hanging around your kitchen. These sunny toasts are the perfect AM pick me up for an easy weekday breakfast.
- 2 eggs
- 1 tablespoon oil
- 2 slices gluten free bread, toasted
- 1/ 2 avocado, sliced
- Hemp hearts
Heat oil in a saucepan. Add the eggs and cook over medium for 3-4 minutes, until whites are set and yolks are runny.
Mash the avocado onto each slice of toast. Top with the fried eggs and a sprinkle of hemp hearts.
