Add ghee and garlic to a pan and sauté over medium heat until fragrant. Add kale and continue to cook until leaves are tender. Finish with a squeeze of lemon juice and season to taste with salt and pepper. Transfer to a plate.
In the same pan, cook an egg until whites are just set and yolk is cooked to desired doneness, about 3-4 minutes. Transfer to plat with kale. Serve with avocado.
