ingredients

  • 400 gram tofu
  • 140 gram wholegrain white spekt flour
  • 100 gram potato starch
  • 2 tabelspoons sugar
  • 1 lemon juiced
  • 1 teapsoons vegan butter for frying
  • 1 cup blueberries
  • 1 tablespoon water
  • 1 tablespoon lime juice

Method

Tofu gnocchi

  • Step 1

    add tofu and lemon juice to your blender and blitz till smooth.

  • Step 2

    add the rest of the ingredients till the ball forms. NO LONGER.

  • Step 3

    divide the dough ball into 4 equal pieci.es

  • Step 4

    roll each piece into a long sausage and cut them into equal little pillows 😁 and set them on the tray till you used all your dough.

  • Step 5

    I sprinkle them with extra flour to prevent them from sticking together.

  • Step 6

    In a large saucepan boil some water and add a pinch of salt.

  • Step 7

    Set a bowl of ice water on the side.

  • Step 8

    Cook your tofu gnocchi in batches. I did 3 batches.

  • Step 9

    Place each batch in the ice water to prevent them from cooking more.

  • Step 10

    When all your gnocchi is cooked and cooled drain them out of the water.

  • Step 11

    Heat the nonstick frying pan and add your vegan butter or oil if using and fry them in batches till you get that slightly crispy and crunchy outside.

Berry sauce

  • Step 1

    Add your ingredients to the pan and heat them up till the liquid reduces slightly

  • Step 2

    Pur the sauce over your tofu gnocchi and simply enjoy!
