ingredients

  • 1/4 red onion, diced
  • 12 ounces lean ground beef
  • 1/2 teaspoon kosher salt, plus more to taste
  • Freshly ground black pepper, to taste
  • 1 box Annie's Classic Cheddar Mac and Cheese
  • 1/4 cup milk
  • 2 tablespoons unsalted butter
  • 1 pickle, chopped plus more for serving
  • 1 cup shredded Colby Jack cheese

Method

  • Step 1

In a large skillet, sauté the diced onion and ground beef with salt and pepper over medium heat until the beef is cooked through.

  • Step 2

Meanwhile, cook Annie's macaroni in 6 cups water for about 6 minutes. Drain and set aside.

  • Step 3

In a saucepan, heat the butter and milk until the butter is melted. Stir in the cheese sauce powder from the Annie's macaroni package until well combined.

  • Step 4

Add the cooked macaroni, cooked ground beef, and chopped pickles to the cheese sauce mixture. Stir until everything is evenly coated.

  • Step 5

Transfer the macaroni mixture to an oven-safe dish or cast iron skillet and top with the shredded Colby Jack cheese.

  • Step 6

Set the oven to broil on high. Keep a close eye on the dish as it broils to prevent burning, as broiling can be quite fast.

  • Step 7

Broil until the cheese is melted and bubbly, about 2-4 minutes. [Note: Keep a close eye on the dish as it broils to prevent burning, as broiling can be quite fast.]

  • Step 8

Garnish with additional chopped pickles and serve hot.
