- Dark chocolate
- Rice cakes
- Double cream or heavy cream
- Fresh strawberries
Method
Step 1
Snap the chocolate into small pieces and add to a bowl. Melt the chocolate in the microwave 30 seconds at a time, and mix well until the chocolate is fully melted.
Step 2
Line a baking sheet with parchment paper. Pour 2 tsp of melted chocolate on the parchment paper. Take the rice cake and press flat onto the chocolate. It should cover the whole surface area of the biscuit. Repeat using as many biscuits as you’d like. Chill for 15 minutes until set.
Step 3
Meanwhile whisk the double cream until soft peaks form. Turn the rice cakes over and spread the cream onto the chocolate-coated rice cake. Top with a fresh strawberry and enjoy!
