Quick and easy chicken noodle stir fry

ingredients

  • 250 grams sliced into thin strips chicken
  • 1 cut lengthwise pak choi
  • 1 cubed red bell pepper
  • 1/2 finely sliced onion
  • 1 clove minced garlic
  • 4 tablesp light soy sauce
  • 1 teaspoo sesam oil
  • 3 tablespook shaoxing wine
  • 1 tablespook cornstarch mixed with 1/2 cup water
  • 200 grams fresh egg noodles
  • 1 tablespook vegetable oil
  • salt and pepper

Method

  • Step 1

    Marinate the chicken with onions, garlic, salt, pepper and 1 tablespoon soy sauce. In a hot wok add the oil and stir-fry the chicken for 2 minutes on high heat.

  • Step 2

    Add the bell peppers and pak choi and stir fry for another minute.

  • Step 3

    In a bowl mix the soy sauce, shaoxing wine and sesame oil. Add it to the stir-fry and stir well. Pour in the cornstarch mixture and lower the heat. Leave to bubble for 2 minutes until the sauce thickens.

  • Step 4

    Toss in the fresh noodles and stir-fry for 2 minutes until they are cooked through. Season to taste.

  • Step 5

    Finish with a sprinkle of toasted sesame seeds and serve with a sweet chilli sauce.
