Hummus Wrap with Jammy Eggs

We love this light, veggie-forward wrap! It starts out with a creamy hummus and is topped with pickled red onions, plenty of veggies and a jammy egg. This is a great go-to lunch!

ingredients
- 1 soft flatbread
- 2 tablespoons hummus
- 1 teaspoon pesto
- 1 teaspoon sriracha
- 2 teaspoons yogurt or sour cream
- 1/2 cup leafy greens
- 2 radishes, quartered
- 2 teaspoons pickled red onion, or any other pickled vegetable
- 1 egg
- 2 teaspoons feta cheese, crumbled
Method
Step 1
In a small pot, bring enough water to boil to cover 1 egg. Once the water is boiling, gently lower in the egg. Cook for 8 minutes for a jammy egg, or 12 for a fully hardboiled egg. Remove the egg from the water and run under cold water. Remove the shell, slice in half and set aside.
Step 2
In a small bowl, mix together the sriracha and the yogurt or sour cream. Set aside.
Step 3
To assemble the wrap, smear the hummus and pesto on the flat bread. Add the leafy greens, radishes, egg, pickled onions and feta cheese. Sprinkle a little black pepper and chili seeds on top. Wrap it up, enjoy!
