  • Steak seasoning of choice
  • Olive oil, as needed
  • Garlic butter, as needed
  • 1 cup day-old rice
  • 1 cup diced green and red bell peppers and onions
  • 1/2 cup corn
  • 1/2 cup salsa
  • 2 tablespoons adobo sauce
  • Chipotle sauce, to taste
  • 2 large flour tortillas
  • Mexican cheese blend, to taste
  • Chopped fresh cilantro

Method

  • Step 1

    Place the top sirloin steak on a cutting board and cut it into small cubes. Season generously with your favorite steak rub, ensuring all sides are evenly coated.

  • Step 2

    Heat a griddle or large skillet over medium heat. Add a slice of garlic butter, then add the steak cubes. Cook to your desired doneness, a minimum of 145ºF for medium rare, stirring occasionally to ensure even cooking.

  • Step 3

    While the steak is cooking, add the day-old rice, diced bell peppers, onions, corn, and salsa mix to another section of the griddle or a separate skillet. Stir every minute to combine and cook evenly.

    Pour the adobo sauce over the steak and the rice mixture, and continue to stir everything together. Cook for another 5-10 minutes, ensuring the flavors meld together.

    Lay the two tortillas on the griddle in an "8" formation, overlapping slightly. Place the steak and vegetable mixture in the center of the tortillas. Sprinkle Mexican cheese on top, drizzle with chipotle sauce, and add fresh cilantro.
