ingredients

  • 1 cup water
  • 1/2 cup rolled oats
  • 1/2 cup optional frozen cauliflower rice
  • 1 tablespoon whole flaxseed
  • 1/3 cup pumpkin purée
  • 1/2 scoop vanilla protein powder
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/4 small diced apple
  • 1 tablespoon almond butter

Method

  • Step 1

    In a small pot over high heat, add water, cauliflower rice (if using), and salt. Let the mixture come to a boil, and then add your oats and flaxseed. Reduce heat to a simmer and let cook for about 3-5 minutes - according to package instructions.

  • Step 2

    Once oats are almost finished cooking, add in pumpkin purée and spices. *If you're using whey or casein-based protein, add about 2 tbsp water to a bowl with your protein powder and create a slurry before adding it to your oats - this is so that you don't get any grainy protein powder chunks in your oatmeal. **If using plant-based protein - you can just add it straight into your oats. Mix until well-combined and let cook until desired texture is reached - adding more water or milk if you want thinner oats.

  • Step 3

    Spoon into a bowl and top with diced apples, almond butter, and any other additional toppings. I like adding banana, granola, plant-based creamer, and dried fruit.
