Easter Bunny Pancakes

ingredients

  • 2 cups pancake mix
  • 2 tablespoons melted and cooled butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups buttermilk

Method

  • Step 1

    Spray pancake griddle or large skillet with non-stick cooking spray. Heat griddle on medium heat.

  • Step 2

    In a large bowl, whisk all ingredients together. DO NOT OVER MIX. Let batter stand for 5 minutes to thicken while your skillet heats.

  • Step 3

    Spoon 2 tbsp batter onto the griddle to form the head. Spoon more batter into two long oval ear shapes. Add a little more batter to create the largest circle - which will be for the body. Create two smaller 1 tbsp circles for the feet.

  • Step 4

    Cook on the griddle for 2-3 minutes. You will know they are cooked when the bubbles stand still and edges are set. Flip and cook until golden brown. Repeat until you have enough shapes for 4 bunnies. Keep the finished pancakes warm in a 200°F oven while you are making the remainder of the pancakes.

To assemble the bunnies:

  • Step 1

    Place two ears towards the top of the plate, layer the medium circle on the bottom edges of the ears. Then layer the large circle on the edge of the head. Add the two smallest circles on the bottom edges to create the feet.

  • Step 2

    Place a round of banana on each foot and place three chocolate chips under each banana to create the foot pads. Dollop 1-2 tbsp yogurt onto the large circle to create the tail. Then cover the circle with shredded coconut to create fur. Serve with butter, syrup, or other toppings!
