Rose & Grains of Paradise Syrup

  • 100 grams Caster Sugar
  • 100 millileters Water
  • 2 tablespoons Culinary Rose Petals
  • 1 teaspoon Grains of Paradise

  • 1 teaspoon Rose & Grains of Paradise Syrup
  • 50 millileters Cognac
  • 100 millileters Rose Scented Tonic Water
  • Ice to Shake & Serve

Method

  • Step 1

    Begin with the Syrup. Add the sugar & water to a small pan and heat over a low heat to dissolve. Once dissolved, increase the heat and bubble until syrupy, about 3-5 minutes. Remove from the heat, add the rose petals & Grains of Paradise, and allow to cool and infuse overnight.

  • Step 2

    The next day, strain the syrup, discard the solids, and decant into a small bottle.

  • Step 3

    When ready to serve, add the cognac and syrup to a mixing glass with 3 cubes of ice. Stir clockwise for 30 seconds then strain into a rocks glass filled with ice. Top up with the tonic water and serve right away.
