  • 40 millileters Scotch
  • 15 millileters Sweet Vermouth
  • 15 millileters Apple Juice
  • 10 millileters Maple Syrup
  • 2 dashes of Orange Bitters

For the Cinnamon Maple Foam

  • 120 millileters Maple Syrup
  • 180 millileters Filtered Water
  • 120 millileters Egg White
  • 30 millileters Lemon Juice
  • 1 teaspoon Soy Lecithin
  • 1 teaspoon Ground Cinnamon

Method

  • Step 1

    Begin with the foam, add everything to a large bowl and stir until homogenous. Using an electric whisk, whip until stiff peaks form. Spoon into a piping bag and pop into the fridge.

  • Step 2

    For one drink, add all ingredients to a mixing glass with 3 ice cubes and stir for 30 seconds clockwise to combine.

  • Step 3

    Strain through a hawthorn strainer into a chilled glass.

  • Step 4

    Pipe over some maple foam, sprinkle with pastry crumbs and top with a slice of dehydrated apple.
