If you haven't already you really should check out my sweet potato gnocchi recipe. Makes perfectly fluffy gnocchi that is great for little fingers to pick up. And it's a great dish to get your kids (if they're old enough) involved in the cooking process. They'll have so much fun rolling the little gnocchi balls. Sweet potato is probably my favourite vegetable. I love its flavour and it is also high in magnesium which is a proven anti-stress mineral (I definitely need that sometimes!). If you've got some time this weekend definitely make this dish. You'll thank yourself for it later (hello leftovers).
