ingredients
- 1/2 cup vegan mayo
- 2 cup soaked in boiled water for at least 10 minutes soy curls
- 1/4 cup Roasted cashews
- 2 tbsp curry powder
- 1 tbsp chopped green onion
- 4 ounces optional raisin
- to taste (recipe below) salt and pepper
Method
Step 1
Soak soy curl in hot water for 10-15 minutes.
Step 2
Heat oven to 375F and roast cashew for 10-15 minutes or until golden brown and fragrant.
Step 3
Combine mayonnaise, curry powder, roasted cashews, green onion, raisins, salt and pepper to taste and mix well.
Step 4
Drain soy curl and combine into mayonnaise mixture. Mix well and chill for at least an hour.
Step 5
Serve and enjoy.
