ingredients

  • 1/2 cup vegan mayo
  • 2 cup soaked in boiled water for at least 10 minutes soy curls
  • 1/4 cup Roasted cashews
  • 2 tbsp curry powder
  • 1 tbsp chopped green onion
  • 4 ounces optional raisin
  • to taste (recipe below) salt and pepper

Method

  • Step 1

    Soak soy curl in hot water for 10-15 minutes.

  • Step 2

    Heat oven to 375F and roast cashew for 10-15 minutes or until golden brown and fragrant.

  • Step 3

    Combine mayonnaise, curry powder, roasted cashews, green onion, raisins, salt and pepper to taste and mix well.

  • Step 4

    Drain soy curl and combine into mayonnaise mixture. Mix well and chill for at least an hour.

  • Step 5

    Serve and enjoy.
