Just wonderful to welcome such lovely people to G&G HQ for yesterday's cookery class - thanks for coming folks! Here's the quick - and healthy - lunch recipe we made - chicken with spinach pesto: . 2 chicken breasts (I like @daylesfordfarm) Glug sunflower oil 200g organic frozen spinach, defrosted 1 large garlic clove, crushed Handful pinenuts Olive oil to taste Handful parmesan (optional) . Set a griddle pan over a high heat. Put the chicken in a bag and bash it with a rolling pin to flatten it out. Brush with sunflower oil and season heavily with salt and pepper. Fry the chicken on a high heat for around 4 minutes on each side. . Meanwhile, make the pesto. Put the spinach, garlic, pine nuts, olive oil and parmesan (if using) in a food processor with a good pinch of salt and whizz until smooth. Adjust the seasoning and add more olive oil to create the consistency your prefer. Spoon the pesto over the chicken and serve (with some @sharphampark spelt and kale crisps is you like - as here) . Rhubarb and orange - a classic pairing. But Seville oranges and raw forced rhubarb is, I discover, a whole different beast to the warming, nursery food sweetness of orange, sugar and maincrop rhubarb. I've been playing around with them as a ceviche type marinade for seabass for last week's Candlemas feast. And, goodness, it doesn't half pack a zingy punch! Bit late (been doing tax returns & finances all day - urgh) , but here's this week's #meatfreemonday recipe: . Spinach and pine nut frittata (also known as My Lunch) . Serves 2 . 3 whole eggs 3 egg yolks 3 tbsp full fat creme fraiche 100g cheddar, chopped 200g frozen organic spinach, defrosted and squeezed dry Pinch salt handful pine nuts . Whisk everything together (except the pine nuts) then pour into an ovenproof non-stick dish. Scatter over nuts. Bake at 185oC for 20 mins. NEW BLOG POST: quince with Sichuan pork and forced rhubarb. Link in biog. You know those chainmail gloves you can use when shucking oysters? Well, they would be useful if you plan to grow quince. The growing of the quince itself is relatively effortless. It’s in the cooking of them that the effort is spent. They are utterly impenetrable. They make a butternut squash look like a ripe peach. But it's worth the struggle. I've been experimenting with quince this week and found it delicious with pressed pork belly for a decadent, show-off starter. A faff for a starter, yes, but my goodness, worth it. China is the second largest producer of quince (after Turkey), which might explain why I am drawn to pairing it with the tongue-numbing zing of Sichuan pepper. The combination of fatty pork with sour rhubarb and sweet, fragrant quince is the classic sweet-versus-sour story of so much oriental food. There might be a pudding too. Probably involving almonds.
