ingredients
- 2 medium size sweet potatoes
- 1 can chickpeas (rinsed)

Sauce
- 50 grams tomato sauce
- 2 tablespoons sriracha sauce
- 1/2 lemon juice
- 1 teaspoon maple syrup
- 1 tablespoon soy sauce
- Salt, pepper and oil to taste
Method
Step 1
Place the halved sweet potatoes (with skins) on a baking tray along with the chickpeas. Bake until the sweet potatoes are tender and the chickpeas are crunchy.
Step 2
Whisk together all the sauce ingredients.
Step 3
Scoop out the inside of the potatoes and combine together with chickpeas and the sauce.
Step 4
Fill the potato skins and top with fresh herbs, salt, pepper and a generous spoon of plant based yogurt
