ingredients

  • 2 cups all-purpose flour
  • 1 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 cups unsalted butter
  • 2 cups granulated sugar
  • 4 pieces large eggs
  • 1 cups milk
  • 1 tablespoons vanilla extract
  • Gel food coloring (red, orange, yellow, green, blue, purple)
  • 3 cups confectioners' sugar
  • 1 cup softened unsalted butter
  • 1 teaspoons vanilla extract
  • 3 teaspoon heavy cream

Method

  • Step 1

    1. Preparing the Cake Layers: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans. In a large bowl, sift together the flour, baking powder, and salt. Set aside. In another bowl, cream together the butter and sugar until light and fluffy using a hand mixer or stand mixer. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined. Divide the batter evenly into six bowls. Add a different color of gel food coloring to each bowl, creating vibrant shades of red, orange, yellow, green, blue, and purple. Pour each colored batter into the prepared cake pans, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

  • Step 2

    2. Making the Frosting: In a large bowl, beat the softened butter until creamy using a hand mixer or stand mixer. Gradually add the confectioners' sugar, mixing until smooth and well combined. Stir in the vanilla extract. Add the heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency. Beat on high speed for 2-3 minutes until light and fluffy.

  • Step 3

    3. Assembling Your Rainbow Cake: Place one cake layer on a serving plate or cake stand. Spread a layer of frosting evenly over the top. Stack the remaining cake layers on top of each other, spreading frosting between each layer. Use the remaining frosting to cover the top and sides of the cake, creating a smooth finish. Decorate with sprinkles, edible glitter, or fresh fruit for an extra touch of charm.

  • Step 4

    4. Serving and Enjoying: Slice into your masterpiece and marvel at the vibrant layers of color! Serve your Rainbow Cake at birthdays, celebrations, or any occasion that calls for a burst of joy and sweetness.
