- 1 large butternut squash
- 1 tablepsoon olive oil
- Kosher salt, to taste
- Freshly ground pepper, to taste
- 2 pork sausages, casings removed
- 1/2 pound ground pork
- 1/2 yellow onion, diced
- 2 garlic cloves, minced
- 3 cups baby spinach
- 1 large apple, peeled and diced
- 1/2 teaspoon fresh rosemary, chopped
- 1/4 cup almond, chopped
- 1/2 cup steamed chestnuts
- 1/3 cup dried cranberries
- 2 tablespoons brandy
Method
Step 1
Preheat the oven to 400°F.
Step 2
Slice the butternut squash in half lengthwise with a sharp knife. Scoop out the seeds and brush the flesh with olive oil. Season with salt and pepper.
Step 3
Place the squash cut-side down on a baking sheet. Roast for 40–55 minutes, until the flesh is tender and caramelized.
Step 4
While the squash roasts, heat a skillet over medium heat. Add the sausage and ground pork, breaking them apart with a spatula, and cook until browned.
Step 5
Stir in the diced onion and garlic, cooking for another 3–4 minutes until the onion softens. Add the baby spinach and cook until wilted.
Step 6
Add the diced apple, rosemary, almonds, chestnuts, and dried cranberries. Stir to combine. Pour in the brandy and cook until the liquid evaporates. Set the sausage filling aside.
Step 7
Once the butternut squash is done, remove from the oven and carefully scoop out some of the flesh to create space for the filling (you can reserve this for mashed squash).
Step 8
Turn on the broiler. Stuff the sausage mixture into the butternut squash halves. Place the stuffed squash under the broiler, about 6 inches from the heat source, and broil for 5 minutes, or until the top is golden.
Step 9
Remove from the oven and serve immediately.
