ingredients
- 4 beets
- olive oil
- 2 tablespoons horseradish
- 1/2 cup creme fraiche
- 1/2 squeeze of lemon
- purple radish sprouts
Method
Step 1
Preheat oven to 400F.
Step 2
Drizzle the beets with olive oil and a splash of water. Place in a small ovenproof dish, cover with foil, and roast in the preheated oven until it is just soft. 1 to 1 ½ hour, insert a knife, and it should have no resistance going through. Allow the outer skin to cool and remove.
Step 3
Mix the horseradish and crème fraiche, salt, and pinch of salt in a small bowl. Mix well and taste as you go along until the sauce is the way you like it.
Step 4
Cut the beets and place them on a dish. Sprinkle a small amount of olive oil over it and serve the horseradish sauce alongside. Add a couple of pinch of the purple radish sprouts.
