Creamy Porcini Mushroom Butter Bean Pasta

I don’t know why there’s no butter bean or mushroom emoji but those would have been perfect for this scrumptious, super easy mushroom and butter bean pasta.
Did you notice there’s no beans on the plate? Well technically there are but we we have whizzed them into the sauce! It’s such a simple pasta dish that is perfect for making extra for lunch the next day, having friends round or just having for yourself!
Packed with beans, mushrooms, shallot and using farfalle pasta - I couldn’t be happier. Don’t forget some grated Parmesan on top!

ingredients
- 1 pack brown button mushrooms, halved
- 250 grams farfalle pasta
- 1 shallot, sliced
- 3 tablespoons porcini mushroom paste
- 1/2 cup butter beans
- 200 ml cream
- Olive oil
- Salt
- Pepper
- Parmesan cheese
Method
Step 1
Cook your pasta al dente as directed on packet.
Step 2
Fry your shallot with a little olive oil until softened. Then add the porcini paste and cream. Simmer for a few minutes. Pop in a heat-proof blender and blend until desired texture, I don’t make mine completely smooth as I like it with some texture.
Step 3
In a pan, cook your mushrooms with a dash of olive oil and a sprinkle of pepper until all water has evaporated (out of them) and they are golden (about 15 min on a medium heat).
Step 4
Combine sauce, pasta and mushrooms together, mix and serve with Parmesan cheese on top! You can also stir some cheese into the sauce - yum!
