Quinoa Miso Salad With Lentils, Roasted Butternut Squash & Cranberries
Looking for a healthy side dish packed with plant-based-protein & can deal with all allergies coming to your holiday Try my quinoa lentil salad with butternut squash cranberries and spinach. Top it with my ginger miso dressing and good to go (skip the pecans for those with nut allergies or put on side). I'll be eating this on top of a green salad and some other veggie sides for my main holiday meal. Everything can be prepped ahead and just tossed with dressing on Thanksgiving or what ever day you make this for. Make extra for leftovers, especially the lentils!
