On Thursday I had a bunch of raspberries about to go bad, so I decided it was Syrup Time. I threw in a handful of lemon thyme from my garden. Overripe raspberries are too sweet for me, but the astringent/floral/citrus qualities of lemon thyme added a lovely depth of flavor that turned this syrup into something magical.

Obviously Clover Clubs were in order for happy hour. I made us two versions: one with egg white and one without (because I got lazy). The version pictured is made with @suntory_rokugin, sans egg white. Tastes like the fanciest Sweet Tart you’ve ever had. I LOVE how vibrant it turned out. The lemon thyme comes across stronger in this version as well.

Raspberry Lemon Thyme Syrup

  • 1 cup raspberries
  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon lemon thyme leaves off the stem

Method

For the Syrup

  • Step 1

    Simmer all ingredients in medium for 10-15 minutes under syrup starts to reduce. Strain the solids and allow to cool before storing in the fridge.

Lazy Clover Club

  • 2 ounces gin
  • ½ - ¾ ounce raspberry lemon thyme syrup, or to taste
  • 1/2 ounce fresh lemon juice
  • Optional splash of club soda
  • Garnish with 3 raspberries or fresh lemon thyme

For the Cocktail

  • Step 1

    Combine gin, raspberry syrup and lemon in a shaker with ice. Shake vigorously and double strain into an icy coupe glass. Top with a little club soda if you want to tame the tart. Garnish with raspberries and enjoy!
