ingredients

  • 400 gram flour
  • 70 gram starter
  • 6 salt
  • 250 room temperature water
  • 300 gram minced meat (beef or lamb)
  • 3 green pepper
  • 1 chopped onion
  • 2 grated tomatoes
  • 1 spoonful of olive oil
  • 1 tablespoon blackpepper
  • salt to taste
  • 1 tablespoon flaked turkish chili
  • 100 gram kashar cheese(optional)
  • butter

Method

  • Step 1

    Combine minced meat, finely chopped onions & green peppers , grated tomatoes . Season and chill in fridge.

  • Step 2

    Add water and starter to four and salt. Mix to a shaggy dough, adding a little more water if necessary. Set aside and rest for 20 minutes.

  • Step 3

    Tip the dough onto a bench and knead until it’s smooth and pliable. Brush the inside of a bowl with oil, add the dough turning it once to coat, then cover tightly with plastic and set aside until double in bulk. It takes around 3 -4 hours.

  • Step 4

    Preheat the oven to 200 C Line an oven tray with baking paper. Gently knock back the dough and divide it into 2 equal portions. Shape the dough into balls with a smooth surface and set aside for 15-20 minutes for the dough to relax.

  • Step 5

    On a floured bench stretch each portion of dough using your palms into an elongated boat shape not longer than your oven tray (or oven stone) Place half portion of meat in the center of the dough and spread it evenly. Fold the long edge of the dough over the meat. 1.5 cm Pinch the ends together to create a boat shape.

  • Step 6

    Bake the side pies for 20-25 minutes, until the meat is cooked and the bread is golden brown and crisp. Remove from the oven, brush the bread with butter Rest for 5 minutes .To serve, cut into thick slices.
