ingredients

  • 400 gram flour
  • 15 gram dry yeast
  • 150 milliliter juice of purple carrots
  • 150 milliliter water (luke warm)
  • 1 tablespoon sea salt

Method

  • Step 1

    Mix and knead everything together using a stand mixer. Knead for about 4 minutes on medium-low speed the finished dough should stick a bit at the bottom of the bowl.

  • Step 2

    Place the dough in a lightly greased bowl, cover the bowl, and let the dough rest and rise for 45 minutes.

  • Step 3

    Turn the dough out onto a lightly dusted work surface. Gently deflate it, and divide it into 2 equal pieces.Round each piece of dough into a rough ball by pulling the edges into the center. Cover with greased plastic wrap, and let rest for 15 minutes

  • Step 4

    Working with each peace at a time, flatten the dough slightly then fold it nearly in half, sealing the edges with the heel of your hand and repeating the folding process until the dough is elongated.

  • Step 5

    With the seam side down, cup your fingers and gently roll the dough into a log as long as your oven tray or oven stone (bakerstone) allows. Taper each end to create a pointy end.

  • Step 6

    Place the logs seam-side down into the folds of a heavily floured cotton dish towel. Cover them with lightly greased plastic wrap, and allow the loaves to rise until they're slightly puffy at room temperature for 20-30 minutes.

  • Step 7

    Preheat your oven to 220 C. If you're using an oven stone, place it on a middle rack. Start to heat 1 1/2 cups water to boiling.Place a cast iron pan at the bottom of the oven for the water.Gently roll the doughs on a lightly dusted baking sheet.Using a baker's lame or a very sharp knife make three to five long lengthwise slashes in each baguette. transfer the baguettes into the oven. Carefully pour the boiling water into the cast iron pan, and quickly shut the oven door. The steam will help the baguettes rise, and give them a lovely, shiny crust.

  • Step 8

    Bake the baguettes for 25 to 30 minutes, until they're a very deep golden brown. Remove them from the oven and cool them on a rack.
