Recipe Card

ingredients

  • 200 gram butter
  • 500 gram caster sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 90 cocoa powder
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • A pinch of salt
  • 340 gram plain flour
  • 310 milliliter whole milk
  • 600 gram icing sugar
  • 200 gram butter
  • 80 gram cocoa powder
  • 40 milliliter whole milk
  • freeze dried strawberry powder
  • pink/red sprinkles

Method

  • Step 1

    You begin by creaming the butter and sugar until light & fluffy (I'm sure you know the drill) - then add in one egg at a time scraping any unmixed batter back into the mix! Once all the eggs have been added you put in the baking powder, soda, cocoa, vanilla and salt and fold through thoroughly.

  • Step 2

    Next, you fold through half the flour, followed by half the milk and then add the remainder of both ingredients. This batter is lighter than usual so don't be alarmed. Pour it into two/three greased cake tins (18cm, 20cm or whatever you have in your kitchen)

  • Step 3

    Cook for about half an hour, approximately, however I'm not a fan of assuming cooking times because ovens differ so just check after 20 minutes or so then every 5 minutes after that until cooked through.

  • Step 4

    Once the cake is out of the oven, leave to cool and get on with the icing in the meantime. Begin by whisking up the butter until it becomes significantly paler then sieve in the icing sugar and beat until the butter has taken in all the sugar. You then separate about a cup of that icing and set aside. To the main bowl, you add the cocoa and milk gradually until it's your desired flavour and consistency!

  • Step 5

    The strawberries you slice up so that they'll lay flat on top of the layers. You can then throw them into a simple sugar syrup (bring equal quantities of water and sugar to the boil then cool) if you'd like to give them a protective coating.

  • Step 6

    To assemble begin with the bottom layer of cake, spread over the chocolate icing quite thinly and place the strawberries on top. Distribute equally! The place the next/top layer of cake on top and ice with thicker layer this time. If you are doing three layers repeat the previous process with strawberries. For the top, you then pipe on the strawberry icing around the edge of the cake and sprinkle with whatever pretty and pink embellishments you've got lying around in your pantry!
