ingredients

  • 2 avocados, sliced `
  • 5 heirloom tomatoes, cored and sliced
  • 4 roasted red peppers in oil, sliced
  • 1 ounce basil leaves, chopped
  • Handful pinenuts, toasted
  • 1 (8-ounce) ball burrata
  • olive oil, for drizzling
  • balsamic, for drizzling
  • 1/2 lemon, juiced

Method

  • Step 1

    Add the tomatoes to a large bowl with olive oil and balsamic. Let marinate while the other ingredients are prepared.

  • Step 2

    In a small bowl, add the avocado, lemon juice and salt. Stir to combine.

  • Step 3

    Lay down the sliced tomatoes on a large plate. Scatter the avocado and red peppers over top, then pour the leftover tomato marinade over top. Add pinenuts and burrata and enjoy!
