ingredients
- 2 avocados, sliced `
- 5 heirloom tomatoes, cored and sliced
- 4 roasted red peppers in oil, sliced
- 1 ounce basil leaves, chopped
- Handful pinenuts, toasted
- 1 (8-ounce) ball burrata
- olive oil, for drizzling
- balsamic, for drizzling
- 1/2 lemon, juiced
Method
Step 1
Add the tomatoes to a large bowl with olive oil and balsamic. Let marinate while the other ingredients are prepared.
Step 2
In a small bowl, add the avocado, lemon juice and salt. Stir to combine.
Step 3
Lay down the sliced tomatoes on a large plate. Scatter the avocado and red peppers over top, then pour the leftover tomato marinade over top. Add pinenuts and burrata and enjoy!
