This roasted fruit parfait is the exact breakfast we need to get our morning started off right! Choose any fruit you have on hand and top it with a bit of butter and maple syrup to help caramelize the edges. You won't regret it!

ingredients

  • 8 cups mixed fruit (any stone fruit or berries), pitted and cut into wedges
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup maple syrup
  • 1 1/2 cups yogurt or ricotta
  • 1/2 teaspoon citrus zest
  • 1/2 cup toasted nuts, chopped
  • 1 tablespoon powdered sugar, optional
  • peptias, optional topping
  • coconut flakes, optional topping
  • flax seeds, optional topping

Method

  • Step 1

    Preheat the oven to 450°F. Line a sheet tray with parchment paper.

  • Step 2

    Lay fruit out in a single layer on the sheet tray and drizzle with melted butter. Follow with the maple syrup, then place in the oven until fruit is just caramelized around the edges, about 10 minutes. Remove and allow to cool slightly.

  • Step 3

    Meanwhile, In a mixing bowl mix together the yogurt or ricotta, lemon zest, and confectioners’ sugar (if using).

  • Step 4

    To assemble, place some fruit in the bottom of a glass and add a little of the syrup from the sheet tray. Sprinkle with a few toasted nuts and your choice of toppings. Place a heaping tablespoon of sweetened ricotta/yogurt on top. Repeat to make another layer.

  • Step 5

    Finish with nuts and all other crunchy toppings and another drizzle of the sweet syrup from the roasting tray.
