Serves or Makes: 1 Sandwich

ingredients

  • 1 ciabatta roll, sliced in half
  • 4 slices of thick-cut bacon
  • 1 egg
  • 1/2 avocado, thinly sliced
  • 2 tablespoons chili-lime mayo
  • hot sauce, of your choice
  • salt, to taste
  • pepper, to taste

Method

  • Step 1

    Heat up a non-stick skillet to medium heat. Add four slices of bacon & cook until your desired doneness, I like mine on the crispier side so go for about 7 full minutes of cook time. Once cooked, remove from pan and set on paper towel lined plate for draining.

  • Step 2

    In the bacon fat, dip the cut side of the roll down into the bacon fat, yes, we're toasting the bread with the delicious bacon fat gold. Toast for 1-2 minutes per side on medium high heat.

  • Step 3

    In the same skillet with the bacon fat, on medium low heat, crack in one egg. Spoon the bacon fat over the egg to help cook the whites on top without having to flip the egg to finish cooking. About 2 minutes. Season with salt & pepper to taste.

  • Step 4

    To assemble: Slather both sides of the toasted bread with mayo, on the bottom half, place the thinly sliced avocado that you're also seasoning with salt & pepper. Place the bacon slices on top of the avocado, cut them in half if needed. Place the egg on top of the bacon, add a couple dashes of your favorite hot sauce, then place the other half of the bread on top.

  • Step 5

    Cut the sandwich in half or enjoy whole.
