ingredients

  • 410 gram flour
  • 50 gram sourdough
  • 4 gram dry yeast
  • 100 gram water
  • 4 tbsp sugar
  • 70 gram sweet potato, meshed
  • 3 tbsp butter
  • 2 beaten eggs
  • 1 tsp salt

Method

  • Step 1

    In a large bowl mix yeast, 1 tablespoon of sugar and warm water.

  • Step 2

    Add the remaining sugar, sweet potato, softened butter, eggs and salt to the bowl and mix all ingredients well.

  • Step 3

    Add the sourdough and 3/4 of the flour and stir to a dough with an electric dough hook. Gradually add the remaining flour and continue kneading.

  • Step 4

    Form the dough into a ball and let it rest in an oiled covered bowl for 2 hours.

  • Step 5

    Form into 14-16 balls and let them rise for another 1.5 hours.

  • Step 6

    Then bake it at a temperature of 200 degrees Celsius for 12-16 minutes.
