ingredients
- 60 gram flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 100 milliliter coconut milk
- 2 eggs
- 2 tablespoons butter
- 1 diced banana
- for garnish powdered sugar
Method
Step 1
Preheat the oven to 200 degrees. Place a nonstick ovenproof pan in the oven. Whisk together eggs, sugar and salt in a bowl. Combine with coconut milk, flour, baking powder and diced banana.
Step 2
Remove skillet from oven and add the butter, swirling to coat. Pour in the dough.
Step 3
Bake until golden brown and cooked through, about 25 minutes. Remove from oven; let cool 5 minutes before dusting with powdered sugar.
