ingredients
- 150 gram melted butter
- 150 gram sugar
- 3 eggs
- 200 gram flour
- 1 tsp baking powder
- pinch of salt
- 1 tsp cinnamon
- 1/2 tsp grated nutmeg
- 100 gram chopped dates
- 1 tbsp orange zest
- 200 gram roughly grated carrots
- 100 gram roasted and roughly chopped pecans
- 200 gram full-fat cream cheese
- 50 gram icing sugar
- 50 gram Baobab powder
- 1 tbsp coconutoil
Method
Step 1
Preheat the oven to 180°C and grease a ring cake mould.
Step 2
Pour the melted butter, sugar and eggs into a large mixing bowl and beat the ingredients thoroughly into a mass. Sieve the baking powder, flour, spices and salt and carefully pour them into the liquid mixture. Fold in the remaining ingredients and pour the dough into the cake tin. Leave a few pecans for decoration.
Step 3
Bake the dough for about 40 - 50 minutes and let it cool down.
Step 4
In the meantime, whip the ingredients for the topping and put them in a cool place. When the cake has cooled down, take it out of the mould. Spread the topping on the cake. Decorate the cake with the pecans.
