ingredients
For the Mango Jalapeno Sauce:
- 1/2 cup mango juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/3 cup brown sugar
- 1/3 cup fresh ginger, thinly sliced
- 1/2 orange, zested and juiced
- Himalayan salt, to taste
- 2 jalapenos, thinly sliced
- 1/2 onion, thinly sliced
- 1 mini sweet pepper, thinly sliced
- 1 tablespoon ketchup
- 1 tablespoon chili paste
- 1 mango, diced

For the Fish:
- 1/2 cup vegetable oil
- 1/4 cup all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- Himalayan salt, to taste
- freshly ground black pepper, to taste
- 6 pounds Maine Haddock fillets, more if desired
- fresh cilantro, for garnish, optional
- cooked jasmine rice, for serving
Method
Step 1
To make the sauce, add mango juice, olive oil, and minced garlic into a saucepan over medium heat. Stir until the garlic is golden brown.
Step 2
Add brown sugar, ginger, a squeeze of orange juice, and a pinch of salt. Add jalapeno peppers, onions and mini sweet peppers.
Step 3
When sauce reaches a medium boil, add ketchup and chili paste. Remove from heat, add diced mango, set aside.
Step 4
Heat oil in a frying pan over medium-high heat.
Step 5
To prep the Maine Haddock fillets, mix flour, garlic powder, and paprika in a shallow bowl. Season with salt and pepper. Dredge Maine Haddock in flour mixture, patting down until evenly distributed on both sides.
Step 6
Add Maine Haddock to the frying pan and cook for about 4 minutes on each side.
Step 7
Serve the Maine Haddock topped with the mango jalapeno sauce garnished with cilantro, and served with rice. Enjoy!
