I could not resist showing you the delectable details in my homemade Ramen.😋 Sorrynotsorry. 😁 Chicken broth made with roasted wings, shiitake mushrooms & the usual aromatics. Sweet soy lacquered Chicken & Shiitake, Carrot & Cabbage shreds, Scallion, Watermelon Radish and a perfectly cooked sweet soy marinated Ramen Egg. The final toppers of Chili Threads and a homemade Chili Oil with essences of lemongrass, Indonesia long pepper & star anise.
Homemade Ramen! I took 2 days putting the broth together for maximum flavor and it was worth every second. Chicken broth made with roasted wings, shiitake mushrooms & the usual aromatics. This neat little porky package is a fresh Ventrèche that I made. A few years back I took a French Seam Butchery class and learned how to make this, along with so much more. It's basically the French version of Pancetta, it is simply seasoned with black pepper and sea salt, then hung and aged. Some of this will end up in Cassoulet and some crisped up with shallots & green beans.

Here are they are! Falafel from the recipe I shared in my previous post. These have a nutty golden crunchy exterior and a fragrant delicious melt in your mouth interior. Now if you'll excuse me I need to put these in my face.😋 (Full recipe one post back)
I'm a baller! Rolling up loads of homemade Falafel! Want my recipe? It's #glutenfree and it's #vegan and it's pretty easy. You will need to soak dry chickpea/garbanzo beans overnight and then cook them until al dente. Canned beans aren't going to cut it. Falafel -3 cups Garbanzo Beans, soaked and cooked al dente -1 cup of Parsley -1/2 cup (2 medium) chopped Shallot -1 1/2 teaspoon Cumin -1 teaspoon Salt -5-6 cloves of Garlic, smashed -1 teaspoon Baking Powder -6 tablespoons Chickpea Flour (you can use AP Flour too) -4 tablespoons water Add beans, parsley, shallot, cumin, salt and garlic to a food processor, pulse it until it resembles a very course meal. Pour this mixture in to a mixing bowl. Combine flour and baking powder, stir to combine and then dump this in to your bean mixture. Stir until the flour mix is well incorporated. Add the water next, mix until well combined. Cover it and stick it in the fridge for about an hour. Using wet hands (keep wetting them throughout the process) start making golf ball/walnut sized balls by pressing the mixture together in your hands. At this stage I like to let them rest for 30 minutes (you can also freeze them at this point to thaw and fry later) Fry the balls in 350 degree vegetable oil until golden brown (usually about 5-6 minutes) 😋Stick it on a pita with some lettuce, drizzled with tahini sauce and lemon. Enjoy!
