Ingredients for the salad:
- 1/4 fresh watermelon
- 1 medium cucumber
- 150 gram feta cheese
- 1/2 large red onion
- 1 handfu fresh mint leaves
- 15 pieces olives - optional
- 1/2 teaspoo salt
- 1/2 teaspoon pepper
Method
Step 1
Cut rind from the watermelon and chop the fruit into bite-size cubes. Place them in a colander to drain as your chop and prepare the remaining ingredients.
Step 2
Peel and finely slice the red onion, cut cucumber into small pieces and feta into small cubes. Roughly chop fresh mint leaves (leaving some for garnish). Place it all in a large bowl (together with olives if you are using them) and combine. Season with salt and pepper.
Step 3
Pour the dressing over the salad (to make it simply whisk together olive oil, balsamic vinegar, honey, lemon juice, salt and pepper). Ready to eat! Serve it with toasts with some rubbed garlic and a drizzle of olive oil.
