It is so perfectly cripsy on the outside but also ideally soft and fluffy on the inside. Topped with fresh fruit and lashings of maple syrup (or jam) – simply mouthwatering. Plus this version is egg-free! And it is such a good way of using this bread which you have bought a few days ago, that started to harden (#nofoodwaste). Need I say more? ingredients
- 8 thick slices of preferably day-old bread or baguette, GF if needed
- coconut oil for frying
- 45 gram chickpea flour
- 150 milliliter soy milk
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 pinch of salt
- 1 tablespoon maple syrop or honey
- 1/2 medium banana
- your chosen toppings
Method
Step 1
Place all the batter ingredients in a food processor and whisk until well combined and smooth. Heat a frying pan (medium heat) and grease with coconut oil.
Step 2
Dip each bread slice into the batter and coat well on both sides. Hold each in a batter for 5secs so that the bread absorbs a bit of batter. Don’t do it for too long as this will make the bread too soggy. Fry each bread slice on medium heat for 1-2mins on each side until golden-brown and crispy. Repeat with the remaining slices, adding more coconut oil if needed. Serve warm with your desired toppings.
