- 3/4 pound strawberries
- 1 tablespoon maple syrup or honey
- 10 1/2 ounces plain unsweetened thick coconut yogurt
- 2 pieces large vegan meringues, crushed
- 1/2 handful of fresh mint leaves
- 1 tablespoon dark chocolate, chopped
Method
Step 1
To prepare the strawberry mousse, chop the strawberries into small chunks, then mix with the maple syrup. Let them macerate for at least 10 minutes. After that, you squash some of the strawberries for a juicier dessert and leave some whole.
Step 2
To assemble the Eton Mess layer the coconut yogurt, some of the strawberry mixture and then crumbled meringue pieces in jars/glasses. You can give each a little, gentle stir to mess the dessert up a bit. Finish with a layer of coconut yogurt. Top with some more strawberries, mint leaves and dark chocolate if you wish.
