ingredients

For the muffins:

  • 180 grams plain white flour
  • 6 tablespoons cocoa powder
  • 1 pinch of salt
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons tahini (or peanut butter)
  • 2 tablespoons apple cider vinegar
  • 300 millileters plant based milk
  • 1 orange - zest and juice of
  • 5 tablespoons stevia
  • 6 tablespoons melted and cooled coconut oil

Method

  • Step 1

    Pre-heat oven to 180oC. Sieve the flours, cocoa powder, add remaining dry ingredients, mix.

  • Step 2

    Place wet ingredients in a blender and pulse until the consistency is smooth and silky.

  • Step 3

    Slowly combine wet ingredients with dry but don’t over mix it. Spoon 2 heaped tbsp of batter into each muffin case. Bake for 25mins or until the toothpick inserted comes out clean. Place tray on a cooling rack and leave muffins to cool before taking them out.

  • Step 4

    To make the filling melt chocolate in a microwave with orange juice. Once it cools a bit place it in a piping bag. Core each muffin using a small knife/apple corer and pipe some filling into the center.

  • Step 5

    To make the frosting melt the chocolate using water bath method/microwave. Stir in coconut cream using an electric whisk. Once the consistency is silky smooth, place it in a fridge to firm, for around 3-4h/overnight. Take the frosting out of the fridge and using an electric mixer whip it until fluffy. Place it in a piping bag and pipe a swirl on each muffin.
