"Happy St. Patrick’s Day! I ‘ve decided that this year, instead of preparing something green or with Guinness I’m going to go down the more traditional route and make bread and butter pudding. Well - my version of it 😊 Instead of regular bread I’ve used pillowy vegan brioche and added some crunchy, slightly sour green apples that greatly contrast sweet raisins and apricots and creamy sweet custard. If you’re looking for an easy, quick to make dessert for today – give this a go! And if there is any left – you have your breakfast for tomorrow sorted 😉"

ingredients
- 1 vegan brioche loaf
- 1 pack of vegan custard
- 2 green apples, thinly sliced
- 1/2 teaspoon cinnamon
- 1 pinch of salt
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/2 lemon, juice of
- 2 tablespoons sugar/erythritol
- 2 tablespoons raisins
- 2 tablespoons dried apricots
- 1 tablespoon vegan butter
Method
Step 1
Grease your baking dish with vegan butter. Cut brioche into approx.. 2cm slices, set aside.
Step 2
Peel the apples, cut them into thin slices. Place them in a bowl and gently mix with cinnamon, nutmeg, salt, sugar, vanilla and lemon juice.
Step 3
Layer the brioche slices in a dish, tuck the apple slices in randomly and scatter raisins and chopped dried almonds on top and in between the brioche slices.
Step 4
In a small pan heat the custard slightly, then pour it over the brioche and apples. Sprinkle with some more raisins. Leave it to soak for 20mins.
Step 5
Place in a pre-heated to 180oC oven for around 30mins until golden on top.
Step 6
Take it out of the oven and if you wish brush with maple syrup. Serve warm by itself, with more custard or vegan ice cream.
