Vegan apple cider donuts

"With all the Xmas and New Years Eve desserts gone, it was time to bake again. So to make a change from all those cheesecakes, poppy seeds cakes (which we always make for Xmas here in Poland) I made those vegan baked apple cider donuts. They were so so tasty - perfeclty sweet and fluffy. You have to try them!"

ingredients

For donuts:

  • 200 milliliter apple cider
  • 150 g oat flour
  • 2 tbsp tapioca flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda1
  • 1 pinch of salt
  • 1 teaspoon apple cider vinegar
  • 1 tbsp cinnamon
  • 1/2 teaspoon nutmeg
  • 1 pinch of cardamom
  • 5 medjool dates/other sweetener like maple syrup
  • 100 g apple sauce
  • 50 g peanut butter

Method

  • Step 1

    Pre-heat the oven to 180oC. In a bowl combine flours, baking soda and powder and spices.

  • Step 2

    Place previously soaked in water dates in a blender, blend until you get a paste-like consistency. Add apple cider and almond butter and blend until well combined and smooth.

  • Step 3

    Add dry ingredients, apple cider vinegar and apple sauce and mix until just combined. Don’t over mix it!

  • Step 4

    Spray the donut pan with a nonstick spray. Spoon the batter into each donut mold, filling almost to the top. You can use a piping bag to make it easier. Bake the donuts for around 15mins, until toothpick comes out clean. Remove from the oven and allow to cool before taking them out of the pan.

  • Step 5

    While they are cooling, combine erythrol and cinnamon in a bowl. Dip each warm donut in a mixture to coat. If it doesn’t stick, spray each donut with some cooking spray and then coat.
