When I became vegetarian and tried it for the first time I was really surprised as I didn’t expect it to be so delicious, especially if you add kala namak, then it really tastes like eggs! It’s one of my favourite savoury breakfasts. It’s simple and quick to make but also very flavorful and filling as it’s packed with plant-based protein. ingredients
- 250 gram firm natural tofu
- 1 piece finely chopped onion
- 1/2 teaspoon tumeric
- 2 tablespoons nutritional yeast
- 1/21 teaspoon pepper
- 1/2 teaspoon black salt (kala namak)
- 2 teaspoons soy milk (or water or yogurt)
- 1/2 teaspoon smoked paprika
- 1 Handful chopped spring onions or dill to serve
Method
Step 1
Pat the tofu dry using a paper towel, then crumble it using a fork or your fingers. You want it to resemble scrambled eggs.
Step 2
Heat some oil in a pan and saute the onion for 3mins. Add crumbled tofu and tumeric and saute for 4-5mins. Make sure that tumeric covers whole tofu as this will give it yellow-ish, eggy look. Stir occassionally. Sprinkle nutritional yeast, pepper and smoked paprika evenly and mix. If tofu is too dry add 1-2 tsp of milk. Add the black salt. Stir and taste. If needed add more seasoning. Top with chopped spring onions.
