"I’ve promised you some easy to make but packed with flavours recipes so there you go – those tempeh black beans balls tick all those boxes. All you have to do is to put the ingredients in a food processor and then bake them. They’re incredibly satisfying, nicely tender and packed with plant-based protein. They’re delicious eaten plain or in this simple tomato sauce but you can also have them with pasta, in a sandwich or add them to your salad. I advise making a big batch though, they disappear quickly!"

ingredients

For tempeh black bean balls:

  • 250 grams tempeh
  • 1 can rinsed, drained black beans
  • 3 garlic cloves
  • 1 chopped red onion
  • 2 tablespoons nutritional yeast
  • 1 1/2 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons tahini
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 pinch of salt and pepper
  • 1 handful of chopped fresh coriander
  • 6 tablespoons GF oats

Method

  • Step 1

    Add all ingredients for the balls to a food processor and pulse just until everything is combined. The texture should be moist but also dry enough to handle with your hands. If needed add more oats to thicken them.

  • Step 2

    Pre-heat oven to 180oC, line a baking tray with baking paper. Using your hands shape the mixture into little balls (try to keep them similar in size), place them on a tray. Bake for around 25mins, until they’re nicely golden, flipping once/twice during baking.

  • Step 3

    To prepare the sauce fry onion, red pepper and garlic until softened. Add tomatoes, tomato paste, soy sauce and spices. Cook the sauce until it thickens, then add dark chocolate, stir well. Using a blender blend until smooth.

  • 1 can chopped tomatoes
  • 1 tablespoon tomato puree
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 pinch of salt+cayenne pepper
  • 2 pieces vegan dark chocolate
