ingredients
- 250 gram baked sweet potato
- 1 frozen chopped banana
- 350 milliliter coconut milk (the hard part)
- 40 gram raw cocoa powder
- 1/4 teaspoon salt
- 120 gram pitted and soaked medjool dates
- 1 tablespoon vanilla extract
- 1 tablespoon cinnamon - optional
- 2 tablespoons maple syrop/other sweetener - or less/more depending on how sweet you want your ice cream to be
Method
Step 1
Peel and dice sweet potato. Place it in a pre-heated oven and cook until tender. Allow it to cool.
Step 2
Chop your dates, get rid of the pits and soak them in a boiled water until soft.
Step 3
Place all the ingredients in a blender, blend until completely smooth and creamy. If the consistency is too thick, add some water in which the dates were soaking. Add your chosen add-ins like chocolate chips, cookies, raisins, nuts or coffee.
Step 4
Add the mixture to a loaf tin with parchment paper or ice-cream container and cover with plastic wrap. Leave ice-cream to freeze overnight.
Step 5
When ready to serve, take it out of the freezer and let it sit in a room temperature for 15mins to soften before scooping. Top with your favourite toppings like chocolate chips, coocnut flakes, nuts or sweet sauce.
