"Who loves ice cream? I definitely do 🍦❤️. July is Ice Cream Month which is a good enough reason to eat them every day right? Have you ever made ice cream at home? It is really great as you can create exaclty the flavour that you want plus it is a chance to experiment. This was exaclty the case with this recipe. I had a lot of sweet potatoes at home + I was craving ice cream. And here is the result 😊 This ice cream doesn’t require ice cream machine. The flavour is so rich and texture so creamy. They are super easy to make - you basically whisk everything together and stick it in the freezer!"

ingredients

  • 250 gram baked sweet potato
  • 1 frozen chopped banana
  • 350 milliliter coconut milk (the hard part)
  • 40 gram raw cocoa powder
  • 1/4 teaspoon salt
  • 120 gram pitted and soaked medjool dates
  • 1 tablespoon vanilla extract
  • 1 tablespoon cinnamon - optional
  • 2 tablespoons maple syrop/other sweetener - or less/more depending on how sweet you want your ice cream to be

Method

  • Step 1

    Peel and dice sweet potato. Place it in a pre-heated oven and cook until tender. Allow it to cool.

  • Step 2

    Chop your dates, get rid of the pits and soak them in a boiled water until soft.

  • Step 3

    Place all the ingredients in a blender, blend until completely smooth and creamy. If the consistency is too thick, add some water in which the dates were soaking. Add your chosen add-ins like chocolate chips, cookies, raisins, nuts or coffee.

  • Step 4

    Add the mixture to a loaf tin with parchment paper or ice-cream container and cover with plastic wrap. Leave ice-cream to freeze overnight.

  • Step 5

    When ready to serve, take it out of the freezer and let it sit in a room temperature for 15mins to soften before scooping. Top with your favourite toppings like chocolate chips, coocnut flakes, nuts or sweet sauce.
