Sweet potato crust pizza

"Do you guys like pizza ❤️🍕? Actually I don’t know if there is anyone who doesn’t like it. But have you ever made one yourself? If not then you should definitely give this one a go! It is made of only few ingredients and the dough is much simpler to make than the regular dough. The crust is thin and so wonderfully cripsy and it is topped with some green goodness. Wholesome, rich in flavour, easy, satisfying (it is a pizza after all😋) and you can make it gluten free and vegan! Perfect guilt free Friday night dinner!"

ingredients

  • 400 gram sweet potato
  • 180 gram flour - I mixed gluten free oat flour and buckwheat
  • 1/2 teaspoon salt
  • 1 teaspoon seasonings of your choice - oregano, basil, garlic
  • 4 handfuls toppings of your choice
  • 4 tablespoons sauce of your choice - like pesto or tomato sauce

Method

  • Step 1

    Peel and dice sweet potatoes, bake them in a pre-heated to 180oC oven for an hour, until they are cooked through.

  • Step 2

    Once cooled, transfer sweet potato to a bowl and mash well. Add your chosen flours, salt and seasonings. Mix well using a spoon or preferably your hands to knead the dough into a ball.

  • Step 3

    Pre-heat your oven to 200oC. Place the dough ball between two sheets of baking paper. Use a roller to flatten the dough into a thin circle, then gently peel off the top layer of the baking paper. Transfer pizza to the oven and bake for 15-20mins.

  • Step 4

    Take the crust out and top it with sauce and toppings. This time I went for sauteed red onion, roasted garlic and red pepper, arugula, pine nuts, chilli, crumbled smoked tofu and green pesto.

  • Step 5

    Put it back to the oven and bake for 12-20mins (time will vary depending on how many toppings you have used).
