Sweet potato crust pizza

ingredients
- 400 gram sweet potato
- 180 gram flour - I mixed gluten free oat flour and buckwheat
- 1/2 teaspoon salt
- 1 teaspoon seasonings of your choice - oregano, basil, garlic
- 4 handfuls toppings of your choice
- 4 tablespoons sauce of your choice - like pesto or tomato sauce
Method
Step 1
Peel and dice sweet potatoes, bake them in a pre-heated to 180oC oven for an hour, until they are cooked through.
Step 2
Once cooled, transfer sweet potato to a bowl and mash well. Add your chosen flours, salt and seasonings. Mix well using a spoon or preferably your hands to knead the dough into a ball.
Step 3
Pre-heat your oven to 200oC. Place the dough ball between two sheets of baking paper. Use a roller to flatten the dough into a thin circle, then gently peel off the top layer of the baking paper. Transfer pizza to the oven and bake for 15-20mins.
Step 4
Take the crust out and top it with sauce and toppings. This time I went for sauteed red onion, roasted garlic and red pepper, arugula, pine nuts, chilli, crumbled smoked tofu and green pesto.
Step 5
Put it back to the oven and bake for 12-20mins (time will vary depending on how many toppings you have used).
