Savoury zucchini waffles

"Have you ever tried savory waffles before? Personally I am definitely a sweet breakfast kind of person and usually Sunday mornings are reserved for pancakes with fruits and peanut butter (I mean peanut butter is life!). But this time I was craving something savoury so I decided to get creative with my waffle maker and make something that I haven’t made before – zucchini waffles! Trust me they are as delicious as they look! They are super easy to make, soft inside, really versatile and a perfect way to use up the odd looking bits of zucchini left in your fridge (somehow I always end up with some) 😉"

ingredients

  • 120 gram millet flour or chickpea flour
  • 1 medium shredded zucchini
  • 1 1/2 tablespoon nutritional yeast
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoo your favourite herbs - garlic, oregano, parsley

Method

  • Step 1

    Wash and shred zucchini and place it in a bowl. Add a dash of salt, stir and set aside – this will help to get rid of the excess water.

  • Step 2

    In the meantime prepare the waffle batter. In a bowl mix millet flour, nutritional yeast, baking powder, salt, pepper and your favourite herbs. Stir to combine. Add oil and eggs – stir well until all ingredients are well combined. At the end add shredded zucchini.

  • Step 3

    Allow the mixture to rest whilst the waffle maker gets warm. Pour the batter onto the plate and cook until golden (I usually add two spoons of mixture and cook it for one minute).
