Poached pears in vegan red wine

"Happy Valentine’s Day guys! Hope you are having a good one and that you are celebrating it in your own preferred way. I have to admit that I am this type of person that much rather prefers to stay at home, have a nice meal or a delicious dessert and simply relax, maybe watch a movie. So this year I am making (and eating) those poached pears in red wine. If you are still looking for an easy to make but impressively looking and seriously delicious dessert – I highly recommend giving these a go!"

ingredients

  • 4 firm pears (don’t use overripe)
  • 700 millileters vegan red wine
  • 1 vanilla pod or 1-2 tsp vanilla essence
  • 100 grams sugar or sugar alternative like stevia
  • 1 cinnamon stick
  • 3 tablepoons lemon juice
  • 1/2 orange, juice of
  • 1 teaspoon orange zest
  • 4 tablesp cashew cream or whipped coconut cream, to serve
  • 2 handfuls of chopped walnuts, to serve

Method

  • Step 1

    Peel the pears but keep the stems intact. If necessary gently cut a bit of the bottom off so that pears can stand without falling.

  • Step 2

    Pour wine into a pot together with halved vanilla pod, lemon and orange juice, zest, cinnamon and sugar. Cook on medium heat stirring regularly until sugar dissolves, then place pears in the pot. Make sure that they are submerged (if needed add some water). Bring to a boil, then reduce the heat and simmer for 20-25mins. Cook until the pears are tender, then gently remove them from the pot and set aside. Remember that cooking time will depend on how firm the pears are.

  • Step 3

    Remove the spices from the pot and continue cooking the wine until it becomes thick, like syrup.

  • Step 4

    To serve place some cashew cream on the plates, gently place a poached pear on each, pour the wine sauce over it and sprinkle some chopped nuts.
