Grilled peaches and mozzarella salad

"Stone fruit season is in full swing now and I feel like I have been eating peaches every day. But when summer gives you the best, sweetest fruit you just have to make the most of it. So taking into account my current peach obsession, hot weather outside and hence lack of motivation to cook, for lunch I made a refreshing, loaded with goodness salad with grilled peaches. I don’t know about you, but I love the combination of fruit and veg in a salad and if you add cheese to it 👌! This summer classic is something I could live on – the sweetness of grilled peaches works wonderfully with creamy mozzarella, sharp mint, crunchy pistachios and slightly tart dressing. It is really simple, takes no time to make and is super crave-able! I think I will continue eating it until all the peaches run out."

ingredients

For the salad:

  • 3 pieces firm medium peaches
  • 120 gram mozzarella
  • 2 handfuls arugula
  • 1 Handful fresh mint leaves
  • 1/2 piece red onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon pistachios

Method

  • Step 1

    Pre-heat grill/grilling pan to medium heat. Wash and slice your peaches in 4. Brush each with a bit of oil and place it on a grill cut side down. Grill for 3-4mins or until well-charred, moving frequently. Set aside to cool. If you wish you can cut each slice in half.

  • Step 2

    Toss washed arugula, mint, pistachios and thinly sliced red onion in a bowl.

  • Step 3

    In a seperate bowl whisk together dressing ingredients. Drizzle it over the salad, toss to combine. Serve mozzarella and grilled peaches over the salad.

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon honey - optional
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
